Give these easy recipes a try for something a little different.<\/p>\n<p><strong>Broccoli Cornbread<\/strong><br \/>\n1 box Jiffy cornbread mix<br \/>\n2 eggs<br \/>\n1 stick margarine, melted<br \/>\n10 oz. frozen chopped broccoli (thawed and drained)<\/p>\n<p>Mix all ingredients with melted margarine. Cook in greased 8 x 8 \u00a0an at 350 degrees until golden brown. Serves 6-8.<br \/>\nRecipe adapted from retired power company employees cookbook &#8220;Powerful Good Cooking.&#8221;<\/p>\n<p><strong>Mexican Cornbread<\/strong><br \/>\n2 c. self-rising cornmeal<br \/>\n2 c. milk<br \/>\n1\/2 c. oil<br \/>\n2 cans cream style corn<br \/>\n1 medium onion, chopped<br \/>\n2 jalapeno, chopped<br \/>\n8 \u00a0oz. cheese, grated<br \/>\n2 eggs<br \/>\n2 t. red pepper, optional<\/p>\n<p>Mix ingredients together. Pour into greased pan and bake at 400 degrees for 30 minutes or until done. Serves 12.<br \/>\nRecipe adapted from retired power company employees cookbook &#8220;Powerful Good Cooking.&#8221;<\/p>\n<p><strong>Corn Muffins<\/strong><br \/>\n1 c. self-rising cornmeal<br \/>\n1\/2 c. cooking oil<br \/>\n2 eggs<br \/>\n1 small can cream style corn<br \/>\n8 oz. sour cream<\/p>\n<p>Mix ingredients together. Spray muffin tin with non-stick spray.
