{"id":8261,"date":"2013-12-25T08:00:50","date_gmt":"2013-12-25T14:00:50","guid":{"rendered":"http:\/\/ccmga.aces.edu\/?p=8261"},"modified":"2023-01-22T17:38:43","modified_gmt":"2023-01-22T23:38:43","slug":"orange-cranberry-poundcake","status":"publish","type":"post","link":"https:\/\/mg.aces.edu\/chilton\/orange-cranberry-poundcake\/","title":{"rendered":"Audrey\u2019s Orange Cranberry Cream Cheese Poundcake"},"content":{"rendered":"<p>Cranberries, pecans and oranges are a great combination for the Holidays and this pound cake includes them all.<\/p>\n<h4>Ingredients:<\/h4>\n<ul>\n<li>1 \u00a0c. butter<\/li>\n<li>3 c. sugar<\/li>\n<li>1 \u00a0 8 oz. cream cheese<\/li>\n<li>5 eggs<\/li>\n<li>3 c. plain flour<\/li>\n<li>1\/2 t. salt<\/li>\n<li>1\/4 c. fresh orange juice<\/li>\n<li>2 \u00a0t. grated orange peel<\/li>\n<li>2 \u00a0t. pure vanilla extract<\/li>\n<li>1\/2 c. dried chopped cranberries<\/li>\n<li>1 \u00a01\/2 c. toasted chopped pecans<\/li>\n<\/ul>\n<p>GLAZE:<\/p>\n<ul>\n<li>1 1\/2 c. powdered sugar<\/li>\n<li>About 2 T. fresh orange juice<\/li>\n<\/ul>\n<h4>\u00a0Directions:<\/h4>\n<ol>\n<li>Preheat oven to 350 degrees. Butter and flour a Bundt or 10&#8243; tube pan.<\/li>\n<li>Toast pecans and coarsely chop. Coarsely chop dried cranberries, set both aside.<\/li>\n<li>Beat sugar, softened cream cheese, and softened butter until light and fluffy. Add eggs, 1 at a time, then beat in orange juice, orange zest, and vanilla extract.<\/li>\n<li>Sift flour and salt together in separate bowl.<\/li>\n<li>Mix dry ingredients into egg mixture with large spoon until just combined. Fold in pecans and cranberries.<\/li>\n<li>Pour batter into prepared pan, tapping pan on counter to release any air bubbles.<\/li>\n<li>Bake 65-75 min, Do toothpick test: if a toothpick comes out clean when inserted in middle of the cake, it\u2019s done.\u00a0\u00a0Cool in pan 10 min, then turn out onto wire rack or paper towels\u00a0 to completely cool.<\/li>\n<li>For Glaze:\u00a0 Mix powdered sugar and orange juice, drizzle all over cake.<\/li>\n<\/ol>\n<p>Original recipe provided by Audrey Giles.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Cranberries, pecans and oranges are a great combination for the Holidays and this pound cake includes them all.
